All Gold Balsamic vinegars and condiments are naturally thick ,made with Lambrusco and Trebbiano cooked grape must and wine vinegar; with no preservatives , no caramel and no thickening agents ; it can be organic or coventional.
The Gold Balsamic vinegar of Modena PGI has 6% acidity , while the Gold balsamic condiment is less than 5% acidity. They have both the same density .
These products are aged in oak barrels.
